Our salt is harvested in the historic salt pans of Trapani, Sicily. It’s situated in a WWF-protected reserve, so the natural eco-system is maintained, and the area is protected from pollution.

Sea salt production requires patience, meticulous attention to detail and passion - all qualities of our family-owned producer who has been harvesting salt for 40 years.
Fior di sale crystals are notoriously difficult to produce as they rely on a unique set of oceanic and environmental conditions coming together at just the right time.
In August, when the Mediterranean sun is at its strongest, our producer waits for the perfect still conditions when the fior di sale crystals, in their distinctive pyramid shape, bloom like a flower and rise to the surface of the water. These delicate crystals are then quickly, but carefully removed by hand.
